Crab Muffins

Serves 2 for a hearty lunch, or 4 accompanied by soup or salad.
 
Filling:
1 can Sea Fare or Miller's Select Crab Meat (drained)
2 tbsp. green onion (thinly sliced)
1 tsp. lemon juice
1 tbsp. chili sauce or ketchup
1/4 cup mayonnaise
 
2 English muffins, (split and lightly toasted)
 
Topping:
1/4 cup mayonnaise
1 egg separated
1/4 cup grated sharp cheddar cheese
 
Preheat oven to 350° F. Combine green onion, lemon juice, chili sauce and mayonnaise. Gently blend with Sea Fare or Miller's Select crab meat. Spread on lightly toasted English muffins and place on cookie sheet. Bake until heated through (approximately 4 minutes). For topping, blend mayonnaise, egg yolk and cheese. Beat egg white until just stiff and fold into mayonnaise mixture. Remove muffins from oven and adjust oven to broil setting. Spread topping over muffins and broil until puffed and golden (approximately 2-4 minutes).
