All grades are virtually shell-free. Even the difficult-to-pick Sea Fare or Miller's Select White and Claw grades are ready to use.
Drain Sea Fare or Miller's Select crab by opening cans and allowing them to rest on their sides for a minute or two. The brine contains little crab flavor and should be discarded. Do not rinse or add salt.
For an aesthetically beautiful presentation, try to keep Sea Fare or Miller's Select crab pieces as large as possible by minimizing handling and mixing. The product is already cooked and sterile, so it does not need to be cooked, just heated. Turn over lightly once, and try not to stir. Some chefs even assemble no-mix dishes in layers in hotel trays using spray or squeeze bottles to apply sauces.
Sea Fare or Miller's Select Crab Meat is safe and ready to serve hot or cold. Prolonged cooking or boiling will decrease flavor and quality of texture. Crab meat should be added after most other ingredients have cooked. Some chefs simply arrange the crab meat in its serving container and ladle sauce or soup over it.
Sea Fare or Miller's Select Crab Meat has a 4 year shelf life and does not need to be refrigerated. Our commercially sterile process allows the crab meat to be safely served without additional cooking. Do not freeze.
